Cucumber & Dill Dip

The boyfriend have been scratching his head for weeks on what to bring to his company’s potluck. Then one morning from out of nowhere I receive a text from him telling me that he has decided to bring nachos and homemade dip. He even Google-ed and sent me a couple of links to some pretty simple dips. Hahaha But not to say that his choices were bad but I myself simply prefer something light and fresh. So I did a little research and found a refreshing combo of cucumber and dill dip to go with them crunchy nachos.

As always, I like things simple and a recipe that you can tweak to suit your preference.

[Ingredients] – Serves 3 packs of 185gm Chacho’s chips
3 Japanese Cucumber / Kyuri, peeled, deseeded and cubed
6 tablespoons of mayonnaise
6 tablespoons of low-fat sour cream
2 1/2 teaspoons of white vinegar
2 sprigs of fresh dill, finely chopped
Sprinkling of salt and pepper to taste

This dip is best served chilled. So leave it covered in the refrigerator for at least an hour before digging into it~ Have someone tie you on a chair or something, if you have to. Hahahaa

So grab these ingredients (and not forgetting Chacho’s) later after work and you will have an amazing homemade snack while watching a movie or since it’s EPL season, share it with your buds while watching the match. And hey, it can also be a bribe to your other half on letting you watch the match. 😉
