Egg Salad Sammy

It’s lunch and tummy’s growling? Here’s another simple and quick lunch for the busy bees….and lazy bums like me 😉


[Ingredients] – 3 sandwiches
2 hard boiled eggs
1 small red onion, diced
1 sprig of dill or chives (optional)
Half to 1 teaspoon of salt and pepper, up to your preference
1 dollop of mayonnaise
1 dollop of sour cream (optional)

Ready? Just mash the eggs using a fork and mix all of the other ingredients together. Lather it on a piece of bread and voila, bon apetit!
